Almond Butter Cookie Dough Bites [Gluten-Free, Dairy-Free, Vegan, Refined Sugar-Free, No-Bake]

These no-bake, gluten-free, vegan Almond Butter Cookie Dough Bites are filled with dark chocolate chips and covered in shredded coconut.

the question you ask yourself when it’s almost 100°F and your air conditioning just can’t compete with the sweltering heat from the sun beaming through the panes of glass on your front door so you keep all your blinds closed and live like a hermit just so you don’t melt like the Wicked Witch of the West.

Don’t get me wrong. I LOVE summer…maybe even as much as a certain cute, comedic snowman. 🙂

Buuuuut, when your house feels hotter than it is outside and it’s 90+ out there, then you tend to get a little crazy…

especially when you’re a food blogger and you really need an oven to make the recipes you’ve planned but your air conditioner and your oven have decided to have a duel to the death.

So, if the sun and your oven have joined forces against your so-called advanced air conditioning system, then you will LOVE these Almond Butter Cookie Dough Bites because they are NO-BAKE!

That means no hot oven adding fuel to the fire that is your house.

You might not need an oven but you will need a FREEZER!

Creamy almond butter meshed with decadent dark chocolate and tasty coconut…Mmmm!

Prep Time: 15-20 minutes

These no-bake, gluten-free, vegan Almond Butter Cookie Dough Bites are filled with dark chocolate chips and covered in shredded coconut.


  • 1/4 cup unsweetened, unsalted creamy almond butter
  • 2 tablespoons unsweetened applesauce
  • 1/4 cup coconut sugar
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon pure vanilla extract
  • 1 cup gluten-free oat flour
  • 1/4 teaspoon kosher salt
  • 1/3 cup vegan, refined sugar-free chocolate chips
  • 2 tablespoons unsweetened shredded coconut



Using a spoon, mix almond butter, applesauce, coconut sugar, maple syrup and vanilla extract together in a mixing bowl.


Stir in oat flour and salt.


Fold in chocolate chips.


Use a small cookie scoop (I used a #50 disher) to scoop out dough and form into balls with your hands. Place dough balls onto parchment-lined baking sheet (makes approximately 12 dough balls).


Roll each ball in shredded coconut and return to baking sheet.


Place in freezer for 10-15 minutes.


Be sure to use an almond butter that is not too runny, or the dough bites may not form properly. I used 365 organic creamy almond butter that was both unsweetened and contained no added salt. Keep cookie dough bites refrigerated for three to five days (if they last that long).

    Oh yum!! Cookie dough is my favorite… So is not turning the oven on when it’s so ridiculously hot outside! I just want to stand in my kitchen with my head in the freezer eating these delicious bites 🙂

    You don’t have to tell me about summertime swelter — in South Florida the average “feels like” temperature is about 105° from July through September… I’m all for no cook snacks.
