Blueberry Muffins (Gluten-Free, Refined Sugar-Free)

These Blueberry Muffins are perfect as a delicious start to your day or as an afternoon snack.

Blueberries have always been a favorite of mine since I was a kid. In fact, as a child of the 80s, my favorite Strawberry Shortcake doll was not the one who resembled me most, Strawberry herself, with her red hair and freckles. Instead, it was none other than Blueberry Muffin with her neon blue hair and delightful blueberry smell permeating my toy box.

Now that we’re on the subject, the Strawberry Shortcake dolls they have today are just not the same. I wish I had one of my old ones to show you, but I sold my whole collection on ebay when I got married in 2002. I think I had every one of those dolls…even the weird spider lady and the caterpillar Strawberry and her friends rode around on.

Well, I might not be able to share a picture of my Strawberry Shortcake collection, but I can show you one of my crazy red hair. OK, maybe two…

I have no idea what happened, but my hair is not that red anymore. Maybe it’s age. Maybe it’s stress. Or maybe it’s all those blonde highlights I keep getting. Whatever!

So, what does all this reminiscing have to do with blueberry muffins? Well, for me, biting into a blueberry muffin brings me back to the summers of my youth. The blueberry is our New Jersey state fruit and all. One taste of a blueberry muffin and Iโ€™m cruising on my bike with my best friend, soaking in the summer sun in the salty ocean air or listening to โ€œWe Built this Cityโ€ while circling the roller rink floor.

So, with all that being said, I made it my mission to create a blueberry muffin that is not only gluten-free, but also refined sugar-free without sacrificing the taste or the memories.

For the base, I went with oat flour because it helps keep the muffins moist. I also replaced refined sugar with a combination of coconut sugar and honey. And, since blueberries are currently in season here in New Jersey, I chose some fresh gems from the local market. But any fresh, juicy blueberries will do. ๐Ÿ™‚

The result was a light and fluffy muffin that did not disappoint. Mission accomplished ๐Ÿ˜‰

These Blueberry Muffins are perfect as a delicious start to your day or as an afternoon snack.


  • 2 large eggs
  • ยฝ cup unsalted butter, melted and cooled so it's not too hot
  • ยฝ cup milk
  • ยผ cup coconut sugar plus 2 tablespoons
  • ยผ cup honey
  • 1 teaspoon pure vanilla extract
  • 2ยผ cup whole grain gluten-free oat flour (I used Bobโ€™s Red Mill)
  • ยผ teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 ยผ cup fresh blueberries



Preheat oven to 350ยฐ F.


Line a muffin tin with 12 baking cups.


Whisk together eggs, melted butter, milk, coconut sugar, honey and vanilla in a large bowl.


In a separate bowl, mix gluten-free oat flour, salt and baking soda.


Stir dry ingredients into wet ingredients.


Fold in 1 cup of blueberries


Fill baking cups with batter until used up (approximately 3/4 full per cup).


Use the additional ยผ cup blueberries to top each muffin.


Bake for 24-28 minutes until toothpick comes out clean (mine took 26 minutes).
