Chickpea Flour Chocolate Chip Cookies [Gluten-Free, Grain-Free, Refined Sugar-Free, Nut-Free]

These soft and chewy Chickpea Flour Chocolate Chip Cookies are gluten-free, grain-free and refined sugar-free, providing a healthier version of this classic favorite.

Once upon a time, in a far away place (New Jersey), there was a girl who obtained a secret recipe from her father for the softest, chewiest chocolate chip cookies in all the land (still New Jersey).

The girl shared her cookies with family and friends, and even once used them to get out of trouble with her college RA for having a bottle of wine in her dorm (for the record, she was 21). Everyone begged her for the recipe but she kept it tight-lipped.

Then one day, the girl decided to give up refined sugar and wheat flour and so, her days of cookie making were over…

HOLD ON! What kind of happy ending is that? No, no, no! That’s not how the story should end. Let’s change things up a little…


And that’s exactly what she did – change things up. First, she swapped white granulated sugar and brown sugar for coconut sugar. But flour, oh, that was a pesky little problem she had on her hands. So many gluten-free flours and yet none were quite right. She thought her prince would never come. And then, like a knight in shining armour, chickpea flour rode in on its steel horse (OK, fine it was a shopping cart) and saved the day!

This surprise ingredient produced a wheat-free cookie with a similar consistency to her signature recipe. It also provided a number of vitamins and minerals in addition to protein and added a nutty flavor without actual nuts, which was suitable for her eldest daughter with nut allergies. And her gluten-free husband couldn’t believe they tasted like the cookies he remembers her making a long time ago.

So, they all lived happily ever after eating lots of Chickpea Flour Chocolate Chip Cookies.

But, before I let you have it, I must share with you that I made many test batches of these cookies before posting THE ONE. I experimented with the flour to butter ratio until I got it just right. You know, like Goldilocks. Not too hard, not too soft. What? I’m in a fairy tale mood today. 🙂

Anyway, it was a tough road trying out all those test batches. Some really were too dry and some really were too soft, like at one point, there was a chickpea cookie mountain, not individual cookies. But in the end, it was worth it! I hope you’ll think so too. 🙂

Chickpea Flour Chocolate Chip Cookies [Gluten-Free, Grain-Free, Refined Sugar-Free, Nut-Free]

These soft and chewy Chickpea Flour Chocolate Chip Cookies are gluten-free, grain-free and refined sugar-free, providing a healthier version of this classic favorite.

Ingredients

  • 7 tablespoons unsalted butter, softened but not melted
  • 1/2 cup coconut sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cups chickpea (a.k.a. garbanzo bean) flour
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1 cup refined sugar-free dark chocolate chips (such as Lily’s, Davis Chocolate or Enjoy Life)

Instructions

Using a spoon, combine butter, coconut sugar, egg and vanilla extract together in a mixing bowl.

In a separate bowl, combine chickpea flour, salt and baking soda.

Add flour mixture to the butter-sugar mixture. Mix together with a spoon.

Fold in chocolate chips.

Use a cookie scoop (I used a #30 disher) or your hands to create 15 dough balls. Don't press down the dough.

Place each dough ball onto a parchment-lined large or extra large baking sheet. If you don't have a large enough baking sheet, you can bake in two different batches. You want to make sure the dough balls are not too close so that they don't run into each other.

Refrigerate the dough balls on the baking sheet for 10 minutes.

While the dough is in the refrigerator, preheat the oven to 350°F.

Bake for 10-12 minutes until edges are slightly golden brown (mine took 11 minutes). If you are making two separate batches, keep the second tray in the refrigerator until the first batch is done.

Cool on baking sheet for 10 minutes to ensure cookies are set before transferring to wire rack to continue to cool.

    This looks moist and chewy. I have not tried garbanzo flour before and based on the image here, I want to try using it for making cookies . That huge cookie in the photo literally make me drool.
