Chocolate Chip Cookie Dough Bites [Gluten-Free, Vegan, Nut-Free, No-Bake]

These Chocolate Chip Cookie Dough Bites are made of vegan, gluten-free, edible cookie dough and feature an optional chocolate drizzle.

Tasting. Well, biting would be more accurate…

You know, I never realized how difficult it would be to “bite” into a ball of cookie dough until I was faced with the task of taking a picture of it. I definitely ate more than my fair share of these no-bake nom noms (for photography’s sake of course).


But not everything involved in making these little bites of lusciousness was all rainbows and chocolate chips. For some strange reason, when I went to make another batch, well…um, let’s just say it wasn’t pretty. I’ll just get to the point, which is always, always write down your measurements when testing a recipe.

I thought I would remember, but I was mistaken. That reminds me of a shirt my dad used to have when I was growing up. It said…

“I thought I was wrong once, but I was mistaken.”

Well, I was very mistaken and shaken (LOL – couldn’t help it) by the cookie dough catastrophe. So, I did the only thing I could think of…I attached a memory machine to my brain and found the recipe!

Hahaha! I wish! What I did was make them again that afternoon with some tweaks from the morning’s fiasco. Then I brought them to my chiropractor’s office and offered the staff some samples while telling everyone about my near nervous “bakedown.” Well, I guess it was more of a nervous “no-bakedown,” but whatever!

Another patient even got in on the action. Hey, the more tasters, the better! πŸ™‚

After getting all the feedback, I realized there was just one little smidgen of a change to be made. So, of course, when I got home, I made the third batch of the day. And you know the saying, “third time’s a charm!”

And yes, I wrote that “charm” of a recipe down and now I’m going to share it with you…

But first, please note that these Chocolate Chip Cookie Dough Bites are:

  • Oil-Free (when made without the optional chocolate drizzle)

Chocolate Chip Cookie Dough Bites

These Chocolate Chip Cookie Dough Bites are made of vegan, gluten-free, edible cookie dough and feature an optional chocolate drizzle.

Ingredients

  • 5 teaspoons unsweetened applesauce
  • 3 tablespoons coconut sugar
  • 1 tablespoon pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 1 cup gluten-free oat flour
  • 1/4 teaspoon kosher salt
  • 1/3 cup plus 1 tablespoon (for the optional chocolate drizzle) vegan, refined sugar-free chocolate chips
  • 1/4 teaspoon coconut oil (for the optional chocolate drizzle).

Instructions

Using a spoon, mix applesauce, coconut sugar, maple syrup and vanilla extract together in a mixing bowl.

Stir in oat flour and salt.

Fold in 1/3 cup chocolate chips.

Use a small cookie scoop (I used a #50 disher) to scoop out dough and form into balls with your hands. Place dough balls onto parchment-lined baking sheet (makes approximately 12 dough balls).

Place in freezer for 10 minutes.

If using the chocolate drizzle, make while cookie dough bites are in the freezer by combining 1 tablespoon chocolate chips and coconut oil in a small, microwave-safe bowl. Microwave in 15 second intervals, stirring between each one, until chocolate is smooth. Set aside until ready to use.

Dip a small spoon into the melted chocolate and using a back and forth motion, drizzle a line of chocolate across the top of each cookie dough bite. Repeat going in the other direction, if desired.

Place cookie dough bites in the freezer for 10 more minutes.

Notes

Keep cookie dough bites refrigerated for three to five days.

    My eight-year-old would love these. I am forever trying to keep his hands out of the cookie dough when we bake cookies! Now he can have his cookie dough and eat it too.
