Speaking of sharing, these Chocolate Chip Cookie Dough Truffles are perfect to serve to your guests this holiday season. The best part is there is no baking required! Oh, and there are only 8 ingredients required to make them!

What’s different about the cookie dough base in these truffles from my standard cookie dough bites is the texture. The truffle dough is less firm and is more “melt in your mouth-y.” My husband actually said they remind him of the See’s Candies truffles we used to get when we lived in California for a hot minute.

Chocolate lovers will rejoice in these irresistible vegan and gluten-free, no-bake Chocolate Cookie Dough Truffles.

Ingredients

  • 1/4 cup unsweetened apple sauce
  • 2 tablespoons pure maple syrup
  • 1/2 cup coconut sugar
  • 1 teaspoon pure vanilla extract
  • 2 cups whole grain, gluten-free oat flour
  • 1/2 teaspoon kosher salt
  • 2 cups vegan, refined sugar-free chocolate chips (divided)
  • 1 tablespoon coconut oil

Instructions

Using a spoon, mix applesauce, coconut sugar, maple syrup and vanilla extract together in a mixing bowl.

Stir in oat flour and salt.

Fold in 1 cup chocolate chips.

Place dough in mixing bowl in freezer for 10 minutes.

Use a small cookie scoop (I used a #50 disher) to scoop out dough and form into balls with your hands. The dough will be slightly sticky. Place dough balls onto parchment-lined baking sheet (makes approximately 24 dough balls).

Place cookie dough balls on baking sheet in freezer for 10 minutes.

While dough balls are in the freezer, make the chocolate dip. Combine 1 cup chocolate chips and coconut oil in a small, microwave-safe bowl. Microwave in 30 second intervals, stirring between each one, until chocolate is smooth. Set aside until ready to use.

Place one dough ball onto a fork and dip into melted chocolate, making sure it is fully coated. Place chocolate-coated dough ball onto parchment paper. Repeat until all dough balls have been covered with chocolate.

Dip a small spoon into the melted chocolate and using a back and forth motion, drizzle a line of chocolate across the top of each truffle.

Place truffles in the freezer on the baking sheet for 10 more minutes.

Notes

Keep cookie dough bites refrigerated for three to five days.

    I love it that these truffles are vegan, and I’m guessing that the applesauce reduces the fat content quite a bit. Sounds really yummy.
