Chocolate lovers will rejoice in these irresistible vegan and gluten-free, no-bake Chocolate Chip Cookie Dough Truffles.
What’s better than a tiny ball of edible cookie dough? Um, a tiny ball of edible cookie dough that is DROWNING IN CHOCOLATE!
Yes, yes, yes! Give me all the chocolate! Oh, hi there! OK, you can have some chocolate too. I’m willing to share! 😉
Speaking of sharing, these Chocolate Chip Cookie Dough Truffles are perfect to serve to your guests this holiday season. The best part is there is no baking required! Oh, and there are only 8 ingredients required to make them!
What’s different about the cookie dough base in these truffles from my standard cookie dough bites is the texture. The truffle dough is less firm and is more “melt in your mouth-y.” My husband actually said they remind him of the See’s Candies truffles we used to get when we lived in California for a hot minute.
So, if you’re in the market for decadent delight that is also…
then these Chocolate Chip Cookie Dough Truffles have your name written all over them!
So, now get ready to mix, roll and dip…
Chocolate Chip Cookie Dough Truffles [Gluten-Free, Refined Sugar-Free, Vegan]
Chocolate lovers will rejoice in these irresistible vegan and gluten-free, no-bake Chocolate Cookie Dough Truffles.
- 1/4 cup unsweetened apple sauce
- 2 tablespoons pure maple syrup
- 1/2 cup coconut sugar
- 1 teaspoon pure vanilla extract
- 2 cups whole grain, gluten-free oat flour
- 1/2 teaspoon kosher salt
- 2 cups vegan, refined sugar-free chocolate chips (divided)
- 1 tablespoon coconut oil
Using a spoon, mix applesauce, coconut sugar, maple syrup and vanilla extract together in a mixing bowl.
Stir in oat flour and salt.
Fold in 1 cup chocolate chips.
Place dough in mixing bowl in freezer for 10 minutes.
Use a small cookie scoop (I used a #50 disher) to scoop out dough and form into balls with your hands. The dough will be slightly sticky. Place dough balls onto parchment-lined baking sheet (makes approximately 24 dough balls).
Place cookie dough balls on baking sheet in freezer for 10 minutes.
While dough balls are in the freezer, make the chocolate dip. Combine 1 cup chocolate chips and coconut oil in a small, microwave-safe bowl. Microwave in 30 second intervals, stirring between each one, until chocolate is smooth. Set aside until ready to use.
Place one dough ball onto a fork and dip into melted chocolate, making sure it is fully coated. Place chocolate-coated dough ball onto parchment paper. Repeat until all dough balls have been covered with chocolate.
Dip a small spoon into the melted chocolate and using a back and forth motion, drizzle a line of chocolate across the top of each truffle.
Place truffles in the freezer on the baking sheet for 10 more minutes.
Keep cookie dough bites refrigerated for three to five days.
