Double Chocolate Chip Chickpea Flour Cookies [Gluten-Free, Grain-Free]

If you have children, then you may recognize this parody of the song “Ketchup on Everything” from the Disney Channel show, So Random! If not, well then, check it out here.

My favorite part of the song is when they mention ketchup on pickles (0:57 seconds into the video). I LOVE ketchup on pickles. My kids think it’s gross but let’s put it into perspective.  You have a burger (meat-based or plant-based depending on your preference). You top said burger with pickles. You then squirt on some ketchup. You are now eating ketchup on pickles. Case in point.

Okay, so enough about pickles and ketchup. Let’s talk cookies…Double Chocolate Chip Chickpea Flour Cookies to be exact! 🙂

How did I make them? Well, I decided to add some cocoa powder to my Chickpea Flour Chocolate Chip Cookies. Why? Um, because I already told you…chocolate in everything…hell-o! 😉 But it doesn’t stop there. Oh, no siree! Because topping these chewy chocolaty treats with sea salt takes them to the next level!

These gluten-free, grain-free, refined sugar-free Double Chocolate Chip Chickpea Flour Cookies are not only sweet and salty, but also super chocolaty.

Ingredients

  • 8 tablespoons unsalted butter, softened but not melted
  • 1/2 cup coconut sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cups chickpea (a.k.a. garbanzo bean) flour
  • ¼ cup unsweetened cocoa powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1 cup refined sugar-free dark chocolate chips (such as Lily’s, Davis Chocolate or Enjoy Life)
  • Coarse sea salt, for sprinkling

Instructions

Using a spoon, combine butter, coconut sugar, egg and vanilla extract together in a mixing bowl.

In a separate bowl, combine chickpea flour, cocoa powder, salt and baking soda.

Add flour mixture to the butter-sugar mixture. Mix together with a spoon.

Fold in chocolate chips.

Use a cookie scoop (I used a #30 disher) or your hands to create 15 dough balls.

Place each dough ball onto a parchment-lined large or extra large baking sheet. If you don't have a large enough baking sheet, you can bake in two different batches. You want to make sure the dough balls are not too close so that they don't run into each other.

Press down each dough ball with your fingers slightly.

Refrigerate the dough balls on the baking sheet for 10 minutes.

While the dough is in the refrigerator, preheat the oven to 350°F.

Bake for 10-12 minutes until edges are slightly golden brown (mine took 11 minutes). If you are making two separate batches, keep the second tray in the refrigerator until the first batch is done.

Sprinkle with sea salt as soon as you take them out of the oven.

Cool on baking sheet for 10 minutes to ensure cookies are set before transferring to wire rack to continue to cool.

    Great call using chickpea flour and coconut sugar! I do a vegan cookie in a similar way, using almond butter in place of the butter.
