Pumpkin Cinnamon Muffins [Gluten-Free, Refined Sugar-Free, Nut-Free]

These gluten-free, refined sugar-free Pumpkin Cinnamon Muffins are a healthier alternative to traditional muffins, made with whole grain oat flour and nutritious pumpkin puree.

It’s fall, so let’s get pumped for pumpkin!

Honestly, I think I’ve been getting a little too pumped. I’ve been testing so many pumpkin recipes, I’m turning orange. OK, I’m not really turning orange, but I think everything I’ve made this week contained pumpkin in some way or another. Each day I brought a different treat to my office to share. My co-workers love being my blog taste testers in addition to the hubby and kids. One day I brought pumpkin chocolate chip “nice” cream. Another day I brought pumpkin chocolate chip cookie dough bites. Then on the next day, when I walked in with my container, one of my co-workers said, “What’s in there? Something pumpkin I bet!”

LOL. It was something pumpkin. It was these Pumpkin Cinnamon Muffins! But I haven’t just been making sweet treats with pumpkin. I even used itΒ in my cream sauce over on my sister blog in this Creamy Pumpkin Parmesan Pasta and whipped up a pan of this Pumpkin Risotto.

I love that pumpkin is so versatile and can enhance both sweet and savory dishes.Β It’s also super healthy, providing fiber, vitamin A, vitamin C, iron, protein and more!

Now, back to these muffins. They are:

  • Gluten-Free
  • Refined Sugar-Free
  • Nut-Free
  • Pumpkin-y
  • Cinnamon-y

They are also healthier than traditional muffins, not only because of the nutritious whole grain oat flour and the unrefined sugar, but also because good-for-you pumpkin and applesauce replaces most of the butter.

These gluten-free, refined sugar-free Pumpkin Cinnamon Muffins are a healthier alternative to traditional muffins, made with whole grain oat flour and nutritious pumpkin puree.


  • 2 large eggs
  • 2 tablespoons butter (melted and cooled so not too hot)
  • 2 tablespoons unsweetened applesauce
  • 3/4 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup milk of choice (I used whole milk)
  • 1/4 cup plus 2 tablespoons coconut sugar
  • 1/4 cup honey
  • 1 teaspoon pure vanilla extract
  • 2 1/4 cup gluten-free whole grain oat flour
  • 2 teaspoons ground Ceylon cinnamon
  • 1/4 teaspoon kosher salt
  • 3/4 teaspoon baking soda



Preheat oven to 350Β° F.


Line a muffin tin with 12 baking cups.


Whisk together eggs, melted butter, applesauce, pumpkin, milk, coconut sugar, honey and vanilla in a large bowl.


In a separate bowl, mix gluten-free oat flour, cinnamon, salt and baking soda.


Stir dry ingredients into wet ingredients.


Fill baking cups with batter until used up (I used a #20 disher).


Bake for 22-26 minutes until toothpick comes out clean.
